Smoky Mutabal
One of my favourite dips and a dip my family requests weekly - so you know it’s good. Save this recipe and give it a try the next time you have some brinjals in the fridge!
Dips & Mezze
Ingredients
- 2 Large brinjals
- 3 Tbsp tahini
- 2 Tbsp plain yogurt
- 2 Cloves garlic, minced
- 1 Lemon, juiced
- 2 Tbsp olive oil
- 1/2 Tsp salt
- 1/2 Tsp ground cumin
- Fresh parsley and pomegranate arils for garnish (optional)
Method
- 1 Roast the brinjals over an open flame until soft, turning frequently to ensure all the sides cook evenly. I use my gas stove for this step and place it directly over the flame.
- 2 Remove from the heat and set aside to cool.
- 3 Once cooled, slice down the middle and scoop out the flesh or peel off the skin- whatever is easier. Try not to get any black bits mixed in with the flesh as it will make the dip bitter.
- 4 Mash the flesh then add all the remaining ingredients.
- 5 Mix well and adjust the seasoning as needed.
- 6 Serve garnished with freshly chopped parsley and pomegranate arils alongside some fresh pita.
