Creamy Coconut Prawns

Ingredients
- Olive oil
- Jumbo prawns
- Aromat
- Smoked paprika
- Chilli powder
- Butter
- Red onion
- Green bell pepper
- Mushrooms
- Garlic cloves
- Salt
- Black pepper
- Coconut milk
- Lemon juice
- Parsley
- Fluffy white rice
Method
- 1 Season the prawns with half of the aromat, smoked paprika and chilli powder.
- 2 Set a pan over medium-high heat and add 2 tbsp olive oil.
- 3 Once hot, add the prawns in a single layer and sear for 1-2 minutes per side then remove from the pan and set aside. Do this in batches to prevent the prawns from steaming and overcooking.
- 4 In the same pan, add 1 tbsp butter.
- 5 Add the onions, peppers and mushrooms and sauté until soft and lightly caramelized.
- 6 Arrange the garlic and sauté for 30 seconds until fragrant.
- 7 Add the coconut milk along with the other half of the spices and stir.
- 8 Allow to simmer for a few minutes until thickened slightly.
- 9 Add the prawns back along with the lemon juice and fresh coriander.
- 10 Season with salt and pepper as needed and serve with fluffy white rice.
