Creamy Coconut Prawns

Ingredients

  • Olive oil
  • Jumbo prawns
  • Aromat
  • Smoked paprika
  • Chilli powder
  • Butter
  • Red onion
  • Green bell pepper
  • Mushrooms
  • Garlic cloves
  • Salt
  • Black pepper
  • Coconut milk
  • Lemon juice
  • Parsley
  • Fluffy white rice

Method

  1. 1 Season the prawns with half of the aromat, smoked paprika and chilli powder.
  2. 2 Set a pan over medium-high heat and add 2 tbsp olive oil.
  3. 3 Once hot, add the prawns in a single layer and sear for 1-2 minutes per side then remove from the pan and set aside. Do this in batches to prevent the prawns from steaming and overcooking.
  4. 4 In the same pan, add 1 tbsp butter.
  5. 5 Add the onions, peppers and mushrooms and sauté until soft and lightly caramelized.
  6. 6 Arrange the garlic and sauté for 30 seconds until fragrant.
  7. 7 Add the coconut milk along with the other half of the spices and stir.
  8. 8 Allow to simmer for a few minutes until thickened slightly.
  9. 9 Add the prawns back along with the lemon juice and fresh coriander.
  10. 10 Season with salt and pepper as needed and serve with fluffy white rice.
